Sustainability

Farm
“Farm” focuses on upstream supply chain engagement, agricultural emissions, land-use change, biodiverse landscapes, and supplier collaboration. As most food-sector emissions come from Scope 3 purchased goods, this pillar plays a crucial role in achieving SBTi and FLAG-aligned reductions. It includes supplier climate engagement programmes, regenerative agriculture initiatives and soil carbon improvements.

Fork
“Fork” focuses on influencing customer and consumer choices through menu engineering, product redesign, waste minimisation, and behavioural nudges. These interventions target Scope 3 emissions, particularly those from purchased goods, product lifecycles, and customer interactions, and are critical because demand-side actions often yield high-impact reduction at relatively low cost.

Future
“Future” encompasses the operational backbone of the organisation, emphasising renewable electricity procurement, kitchen electrification, building efficiency and logistics optimisation. This is where significant Scope 1 and 2 reductions occur. Achieving these reductions requires capital planning, governance changes, improved data accuracy, and integration of climate criteria into investment decisions, ensuring that operational emissions steadily decline in line with near-term carbon targets.
